Ramadan Meal Prep: Make-Ahead Garlic Herb Chicken and Greek-Style Chicken

Ramadan is just around the corner, and with shorter fasts this year, I’m getting a head start on meal prep to keep things simple yet delicious. These two chicken recipes – Garlic Herb Chicken and Greek-Style Chicken – are versatile, flavorful, and perfect for a variety of meals throughout the month. Whether you pair them with salad, steamed rice, daal chawal, or use them in sandwiches and wraps, these recipes will make your suhoor and iftar effortless and satisfying.

Freezer-Friendly: Place the marinated chicken in a ziplock bag, flatten it, and freeze for up to 3 months.

Cooking Options: Steam, air-fry, or bake. I steamed the chicken today, which kept it tender and juicy.

Serving Suggestions: My family loves to drizzle the extra cooking juices over salad, but these recipes work beautifully in any dish you like.

Garlic Herb Chicken Recipe

Ingredients:

  • 2 lbs skinless chicken thighs (bone-in or boneless)
  • 2 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp Golden Steer Italian Herb Seasoning (or substitute with:
    • 1 Tbsp minced fresh oregano
    • 1 Tbsp minced fresh rosemary
    • 2 tsp minced fresh thyme)
  • 1 Tbsp minced garlic (extra flavor is always a win!)
  • 1 tsp salt
  • 1 tsp freshly ground black pepper (or to taste)

Directions:

1. In a ziplock bag, combine the chicken, olive oil, lemon juice, seasoning, minced garlic, salt, and pepper.

2. Seal the bag and mix everything well to coat the chicken evenly.

3. Lay the bag flat in the freezer, or refrigerate for at least 2 hours if cooking immediately.

4. To cook: Steam, bake, or air-fry. I steam-cooked the chicken in a heated pan, covering and simmering until tender. Increase the heat to evaporate excess water, leaving a little for added flavor.


Greek-Style Chicken Recipe

Ingredients:

  • 2 lbs chicken thighs (bone-in or boneless)
  • 2 Tbsp olive oil
  • 4 Tbsp Greek yogurt
  • Juice of 1 lemon
  • 2 Tbsp Golden Steer Italian Herb Seasoning (or substitute with:
    • 2 tsp oregano
    • 1 tsp paprika
    • 1 tsp garlic powder)
  • 1 tsp smoked paprika (for an extra kick!)
  • 1 tsp salt (or to taste)

Directions:

1. In a ziplock bag, combine the chicken, olive oil, Greek yogurt, lemon juice, seasoning, smoked paprika, and salt.

2. Seal and mix to coat the chicken evenly.

3. Lay the bag flat in the freezer, or marinate in the refrigerator for at least 2 hours.

4. To cook: Steam, bake, or air-fry. For today’s meal, I steamed the chicken until tender and kept a bit of the broth to drizzle over my salad.

Here’s everything you need for this recipe:

Chicken Wings: 3 pounds, split at the joint with tips removed. (Pro tip: Ask your butcher to do this for you to save time.)

Seasonings:

1 tsp salt

½ tsp black pepper

1 tsp garlic powder

1 tsp smoked paprika (or regular paprika if you prefer)

1 tsp onion powder

Butter or Oil: 2 tablespoons, for spraying the baking sheet and wings.

Feel free to customize the spices to your taste! Add cayenne pepper for heat, or a dash of dried thyme for an herby kick.


Step-by-Step Instructions

1. Prepare the Oven and Baking Sheet

Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment paper for easy cleanup and spray it generously with a neutral oil (like avocado or canola oil). This step is crucial for achieving that coveted crispy texture.

2. Prep the Wings

Start by patting the wings completely dry with paper towels. Moisture is the enemy of crispiness, so take your time with this step. The drier the wings, the better the results.

3. Season Generously

Sheet pan Chicken Fajitas چکن فجیٹاس recipe by morEwish

 



One sheet pan is all you'll need to whip up this chicken fajita recipe. No joke. We got one single sheet pan here. Okay, maybe one small bowl as well to mix the seasonings but that’s it. One sheet pan. One small bowl. They're quick and easy to make and cleanup is even faster!







I used homemade fajita seasoning. The fajita seasoning mix takes literally 2 minutes to put together, all you need is an easy combination of cumin, chili powder, paprika, garlic powder, onion powder and salt. But if you want to make things more convenient, feel free to substitute with store-bought seasoning but my friend homemade will make a difference and you know what goes in it.






These sheet pan fajitas are bursting with flavor from the quick spice rub fajita seasoning. To keep dinner super simple, serve with tortillas, shredded cheese, homemade guacamole and your favorite salsa. These chicken fajitas are one of my favorite meals to make ahead of time and divided into meal prep containers you can serve with tortillas for lunches throughout the week.

Ingredients:


Fajita Seasoning:

4 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons paprika (both sweet and smoked paprika work here I prefer smoked).
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons granulated sugar (optional)

Sheet pan Fajitas:

1 1/2 pounds boneless skinless chicken siced into 1/2-inch thick strips
Bell peppers I use yellow and red, sliced into strips
1 onion thinly sliced
3 tablespoons olive oil 
1 lime
1/4 cup cilantro, chopped
8-10 small tortillas

Toppings: Sour cream, sliced avocado or guacamole, pico de gallo, shredded cheese

Mac 'n Cheese with Chicken Cutlets recipe by morEwish

 



The BEST Homemade Mac and Cheese! Outrageously cheesy, ultra creamy, and topped with crispy cheese layer! This mac and cheese recipe is most definitely a keeper. Homemade cheese sauce take this macaroni and cheese recipe over the top! 








Repeat after me - FRESH GRATED CHEESE ONLY! I know it’s a pain, and it’s SO tempting to use the pre-shredded cheese in the bags. But those bags of cheese contain a starchy substance that keeps the cheese from clumping… which also prohibits it from melting as well as it should.

While you can use your favorite cheeses. I personally prefer to add cheddar, colby jack, cream cheese  and Mozzarella and if I get my hands on white cheddar, but you can be very creative with the cheese selection here. Gouda, smoked gouda, swiss, monterey jack... 






Today I served Chicken cutelts to go with Mac 'n Cheese. These are simple thin slices of chicken fillets seasoned well and are breaded with breadcrumb mixture then air fried to get super crispy and flavorful. 
Used very few ingredients, quite inexpensive, this chicken cutlet recipe is so versatile you'll want to be making them all the time. You can thinly slice and top a salad for a quick lunch. Or pop into a sandwich or serve with pasta.

Ingredients:

1 lb Elbow macaroni 
2 tablespoon butter

For sauce:

5 tablespoon butter
1 1/2 tablespoon minced garlic
2 1/2 tablespoon flour
3 1/2 cups half n half
1/2 cup cream
8 oz colby jack, divided
16 oz cheddar cheese, divided
8 oz white cheddar (if available)
6 oz mozarella, divided
2 1/2 tablespoon cream cheese
1//2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon red chili powder or 3/4th teaspoon paprika
1/2 teaspoon black pepper powder
Salt to taste

Chicken Cutlets:


1 lb Chicken fillets
1 teaspoon salt or to taste
1/2 teaspoon black pepper
1/2 teaspoon crused red pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Spicy Crispy Air fryer Chicken Wings چکن ونگز recipe by morEwish

 



KFC style chicken wings with a crispy coating that cracks in your mouth, with amazing seasoning and taste and air fried! 






The first thing you are looking for is moist and juicy chicken. Wings are not the thickest of meats, and you want soft and juicy Kentucky Fried wings, that are not tough and dried after cooking. To ensure they stay juicy you will need to soak your chicken in vinegar bath. By soaking your chicken wings in vinegar bath, you give the crispy coating something to stick to. But perhaps more importantly vinegar is acidic. Acids tend to soften meats up and when they soak in, they break down the proteins ever so slightly meaning it eliminates chewiness. This also ensure that isn’t just the outer crispy coating that tastes good, the chicken inside will too.






The wings are so crispy on the outside but juicy and tender on the inside. You’ll never believe these weren’t cooked in a deep fryer! Cooking wings in an Air Fryer is a great way to save some calories because you don’t need to add any extra oil, but the wings taste as delicious as deep-fried. 
I will not recommend to stack wings in an air fryer. The whole concept works based on air flow, so foods touching or on top of each other will not get that. If you want the crispiest air fryer wings, do them in a single layer, in batches if you have to.

Red chilli powder or paprika 1 teaspoon

Roast Beef Sandwich روسٹ بیف سینوچ recipe by morEwish

 


Tender, savory pot roast piled on fresh baked french bread and smothered in caramelized onions, cheese, and mayo. Are you drooling yet?






When ever I make Pot Roast, we almost always have leftovers, which I love! I never mind reheating leftover pot roast, but I’ve found an even better solution to using up those leftovers Pot Roast Sandwiches! Oh and keep in mind this is also a great way to use up DRY pot roast. Everyone hates over cooked dry pot roast and this is an easy way to use it up and actually enjoy it!





You can include the veggies from the roast if you want, or just use the meat. Even if the roast recipe has onions in it, I still recommend adding the caramelized onions that's my husband's favourite. Trust me, that hint of sweetness really puts them over the top!

Malai Chicken Tikka Masala ملاۂی چکن مصالحہ recipe by morEwish




Soft, succulent, melt in your mouth somokey, grilled chicken pieces, simmered in creamy tangy gravy, which you can enjoy with naan or steamed rice!








Who doesn't love chicken tikka masala! But instead of chicken tikka, what if we subsitute malai chicken tikka boti and make gravy to go with! 
So, last week, while me and Ellmyra were chatting and planning a week's menu, and dreaming and drooling over our favourite dishes, I came up with this idea to create something along the lines of Chicken tikka masla, but with malai chicken boti as that is my family's favourite bbq dish. 








This easy and delicious recipe start with Malai chicken boti, which I just pan fried today, you can grill them as well, or you can use leftover bbq pieces. Then added chicken pieces in a basic yogurt base gravy spiced up with green chilies and black pepper powder to keep that white color, in the end added whipping cream to make that masala creamy and decadent.

Ingredients:

Malai boti:

Chicken boneless cubes - 1 lb
Yogurt 2-3 tablespoon
Heavy cream 2 tablespoon
Salt - 1 teaspoon or to taste
Ginger 1 teaspoon
Garlic 1 teaspoon
Cumin, roasted and crushed - 1 teaspoon
Fenugreek leaves (qasoori methi) - 1/2 teaspoon
Black pepper 1 teaspoon
Mustard 1 tablespoon
Green chili 1 - 2 tablespoon, paste or finally chopped

Masala:

Onion 2, blended and pureed or finally chopped
Ginger 1 teaspoon
Garlic 1 teaspoon
Green chili paste or chopped 1 -2 
Salt 1 teaspoon or to taste
Balck pepper 1 tsp, crushed
Cumin 1 teaspoon, dry roasted and crushed
Coriander powder 1 teaspoon
Yogurt 1 cup
Cream half cup
Green chilies for garnishing
Oil 1/4 - 1/2 cup

Desi style fried chicken aka بروسٹ broast recipe by morEwish

 



These Crispy breaded chicken drumsticks are seasoned well, steamed then coated in breadcrumbs creating a delicious, golden crust. Juicy on the inside and wonderfully crispy on the outside. This is such a quick and easy chicken recipe, ready in around 30 mins. 







I steamed this chicken first with yogurt base marination, it makes chicken pieces more flavorful and cooks evenly. Today I oven fried this chicken (baked), but you can deep fry or even air fry this chicken as well. 

In my opinion this is the BEST Oven Fried Chicken recipe! It comes crispy right out of the oven, is much lower in fat, taste just like any fried chicken but it’s baked instead of fried! 
The cooking time will also depend on the size and thickness of your chicken, so be sure to always check to make sure your chicken is done. The safest way to do this is with a meat thermometer. You want to ensure the chicken has reached 165 degrees F in the thickest part.







I prefer to use a wire baking rack over a cookie sheet to ensure even crisping. If you don’t have a wire rack, you can place the chicken legs right on the foil that’s been sprayed with nonstick cooking spray. But wire rack helps air to circulate around the pieces of chicken so they can cook more evenly.
And spray with butter flavor cooking spray before baking for that golden skin. I recommend the butter one here for the flavor factor, but you can use regular cooking spray as well.

Chicken 2 lbs, skinless 
Yogurt 1/2 cup

Grilled Chicken with veggies گرلڈ چکن recipe by morEwish

 




After an indulgent holiday season, it's natural to feel a need to change our diet. In my experience, extreme overhauls in diet don't last that long, think of them as baby steps to take a few at a time in an effort to better your eating habits throughout this year. And this healthy grilled chicken with veggies will help you acheive that goal!







This healthy protein is versatile enough to be enjoyed throughout the year. From grilling outdoors to indoors or baked. You can have it with refreshing salad or veggies, this recipe is good for weeknights or for any summer cookouts. This marinade has pantry staples to make it easy and simple but there to elevate ultra-satisfying grilled chicken.









To make it little less complicated, I prefer to use ziplock bag,  place it on sheet pan in the refrigerator for at least an hour, but hopefully overnight so the chicken has plenty of time to soak up all that goodness. Every few hours, turn the bag from one side over to the other to keep the chicken coated with the marinade.

You can make ahead and freeze this chicken as well just place chicken into a freezer-safe container or bag and pour over the marinade. Make sure that all of the chicken is well coated. Remove as much air as possible as you seal the bag. Label the bag, arrange in the freezer so that the bag is as flat as possible. Freeze for up to 3 months.

1/4 - 1/2 cup olive oil
1 tablespoon salt
1/2 teaspoon ground black pepper

Rotisserie Chicken in Oven روٹیسری چکن recipe by morEwish

 




Are you like my family, who drool over deli chicken in grocery stores, especially at Costco, which is way more cheaper than buying a raw chicken at desi store? Picking up a deli chicken at the grocery store no doubt sounds super convenient, especially on busy weeknights. Since, we dont have any halal option here, so dont know how that convenience feels like? 

But I know, juicy and flavorful chicken with crispy brown skin, this Homemade Rotisserie Chicken recipe will hit the right spot! 








Even you don’t need a special rotisserie equipment or a fancy As Seen On TV gadget to get the perfect deli chicken at home. This rotisserie chicken recipe can easily be made in your oven, or you can make in your crockpot as well.









Making a rotisserie chicken at home can seem a little intimidating. But in reality, it's just about the easiest thing you’ll ever cook.

To make it more moist, first I brine the chicken which is typically a process in which meat is soaked in a salt water solution similar to marination before cooking. Meat is soaked anywhere from 30 minutes to several days depending on the meat.
Steeping the chicken in a salt and sugar brine is the key to cooking a juicy bird. I recommend brining in the refrigerator for at least 4 hours and up to 24 hours (not more than 24 hrs). Then I made a butter rub, to make it flavorful!








When chicken is this juicy & delicious even the leftovers won’t seem like leftovers, they can be used in countless ways! I love to use it for chicken salad sandwiches, wraps, and more! Keep it in the refrigerator in a sealed container for about a week. Or label ziplock bag and you can freeze as well for upto 3 months.

Ingredients:

Brine:

8 cups water
1/4 cup salt (If you have kosher salt use 1/2 cup)
1/4 cup honey
3 dried bay leaves
5 cloves of garlic smashed and peeled
1 tablespoon whole black peppercorns
3 - 4 sprigs fresh parsley
3 sprigs fresh rosemary and thyme (both or either)
2 lemons sliced
4 lb whole chicken

Butter Rub:

6 tablespoons butter softened
1 1/2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Salt to taste go easy on the salt if you've brined your chicken, I used 1 tablespoon
1/2 to 1 teaspoon black pepper
fresh herbs for garnish optional
